What is Dry Aging?
Dry aging occurs while the beef is hanging in a refrigerated cooler, at a specific temperature and humidity, for 10 to 28 days after harvest and prior to cutting. When beef is dry aged two things happen. First, moisture evaporates from the muscle creating a greater concentration of beefy flavor and taste. Secondly, the beef’s natural enzymes break down the fibrous, connective tissue in the muscle, tenderizing it. Click here for more information on Dry Aging.
What is Natural? Why is Roseda Beef Natural and not Organic?
The U.S. Food Safety Inspection Service says the term “natural” may be used on a label for meat if the product does not contain any artificial flavor or flavoring, coloring ingredient, chemical preservative or any other artificial or synthetic ingredient, and the product and its ingredients are not more than minimally processed. At Roseda Beef, "natural" is not a term we take lightly. All of our beef are pasture raised and grain finished. They are fed a strict vegetarian diet and are not given any growth hormones.
In order for our beef to be considered organic, we would have to feed our cattle ingredients never treated with herbicides or pesticides. This is a very expensive feed. If we were to switch over, it would increase the cost of our beef by 50%.
We want to maintain our high quality standards and give our consumers the best product,and we feel that we can do that with our natural beef products.
How is Roseda Beef environmentally friendly?
Roseda uses intensively managed rotational grazing. This helps in making a healthier pasture environment. With rotational grazing there is increased organic matter resulting in increased carbon storage and an increased viability of soil strata. Roseda Farm also was named Cooperator of the Year in 1999 because of efforts to improve water quality and diminish erosion and run off at the farm.
Is the beef shipped frozen? Does it effect the quality? How long can I keep it in the freezer? What is the best way to defrost it when I receive it? All beef purchased on the Roseda Beef site has been quick frozen by our packers within 2 to 3 hours after it was removed from the refrigerated areas where it has been dry aged for 14 to 21 days. Beef, properly frozen either by the original packer or at home will eat just like fresh. Freezing will maintain quality. Frozen beef should be stored at 0 degrees F or below, preferably in a manually defrosted freezer. Maximum temperature should be 5 degrees F. If freezer cannot keep ice cream brick solid, the temperature is above recommended level. Beef stored properly will maintain its original color, flavor, texture and nutritive value.
If your freezer is set at 0 degrees F, the recommended storage times are: Ground Beef up to 9-12 months, Roasts up to 12 months, Steaks up to 12 months. Beef should be defrosted in its original wrap. The preferred method is in the refrigerator (large roasts 4-7 hours/pound, small roasts 3-5 hours/pound, steaks and burgers, one inch thick, 12-14 hours.) If you’re pressed for time, place sealed vacuum pack in sink of cold water (pack must be watertight) or remove beef from package and place in a microwave set on defrost. It is not recommended to thaw beef at room temperature.
What are your shipping methods?
All our frozen beef products are shipped via UPS Air, UPS Next Day Air or UPS Ground services (when applicable). Non-perishable items, merchandise, and gift certificates are shipped via UPS Ground. We will only ship within the continental US.
How are the shipping costs calculated?
Roseda Beef ships based on the size and weight of the package. This allows for all customers to have an equal shipping amount, no matter where they live or how much they purchase. All of our shipping is done through UPS. Examples of our shipping costs are as follows:
How will my order be packed?
Our meat is shipped frozen, in vacuum-sealed packages. Your order will be hand-packed in a Styrofoam cooler with frozen gel packs. Dry ice is used in conjunction with the gel backs during certain occasions, including shipping to extremely hot conditions. The cooler is then put into a corrugated Roseda shipping box. Our products are packed to withstand up to 48 hours of unrefrigerated shipping.
I won't be home when UPS delivers. Will they leave the package?
We keep a signature waiver on file with UPS so that they will always leave your package at your shipping address, even if someone is not home to sign for it. This ensures that UPS does not "hold" your perishable meat products. Our products are packed to withstand up to 48 hours of unrefrigerated shipping. If the package sits out for longer than this amount of time, we do not take responsibility for thawed product. If you know ahead of time that you won't be home to receive the package and you have special instructions for UPS (such as "leave by garage door" or "leave on side porch") please include those instructions in the "Special Instructions" section of the Order Summary.
What days does Roseda Beef deliver?
Roseda Beef ships out product on Monday through Wednesday. You can take delivery Tuesdays through Fridays. There are also shipping restrictions around certain holidays. Please contact us for holiday shipping hours.
If my steaks arrive partially thawed, are they still good?
Yes, as long as the product feels cool to the touch, the quality is not diminished. You can refrigerate or refreeze them until you are ready to eat them. If the product arrives warm to the touch, please contact us immediately.
